Rich, tender slices of Mangalitsa ham (Joyful Saund Farm | Mountain Home, ID), slow-cooked and finished with a deep, slightly sweet black garlic glaze. It’s savory, a little indulgent, and full of that melt-in-your-mouth texture this heritage pork is known for.
BLACK-GARLIC GLAZED MANGALITSA HAM
A fresh, crunchy mix of spring vegetables, lightly dressed and finished with our housemade Chef Dust aioli. Bright, balanced, and just creamy enough to keep you going back for another bite.
SPRING COLE SLAW WITH CHEF DUST AIOLI
Slow-baked black beans in a honey-garlic sauce that leans savory with just a touch of sweetness. Hearty, comforting, and made with organically grown beans from King’s Crown Organics.
HONEY-GARLIC BAKED BLACK BEANS
Last season’s vegetables, naturally fermented and full of tangy, complex flavor. A little bite, a little funk, and a nice contrast to the richness of the rest of the meal.
FERMENTED VEGETABLES
House-made focaccia with a soft, airy crumb and golden edges, made using Gaston’s wheat.
FOCACCIA BREAD
Silky crème brûlée made with Wild Spaces Farm’s milk, finished with a crisp caramelized top and a playful Pop Rock twist.
